Cory and Tamara have had dreams of opening a pasta restaurant with a local vibe for years. Cory never liked spaghetti and when he did eat it he made sure he had plenty of garlic bread so he could make it into a sandwich. After much conversation, they decided on the name Walking Pasta as it’s an Italian twist to walking tacos which are popular in the Midwest.
After the passing of a loved one, the lasagnas from friends and family started filling the freezer and they took it as a sign. Soon after, a 1987 Ford bus came available.
They never saw themselves in the food truck industry, but it seemed like a good way to start.
After a couple years of running the food truck, people started to know the big red bus. It was where they could come for that “pasta in the bread loaf and the best garlic bites.”
The old bus hit its limits and covid came around leaving them to close it down. Cory and Tamara started looking for a new food truck, but soon found the perfect storefront in their hometown.
